North Star Mall has seen some interesting changes to its lineup in recent years, with new food court stands, a Japanese arcade and a new Brazilian brewery concept launching in recent years. Now, it appears a Chinese hot pot chain is bringing a new all-you-can-eat barbecue concept to the San Antonio shopping hub. Chubby Cattle BBQ has filed a construction project with the Texas Department of Licensing and Regulation, which clues us in to certain details about the incoming restaurant. The filing said that it will cost an estimated $800,000 to renovate an 8,000 square-foot space. It also said the construction timeline will run from May 20, 2026 to February 17, 2027, so it’s unlikely the new Chubby Cattle will open any time soon.
