The company behind the concept says the high-end, high-volume beef operation is headed for the mall, promising theatrical service and big portions, although the official opening date is still listed only as “coming soon.” The restaurant will use a tiered all-you-can-eat system – Silver, Gold and Diamond – with the Gold level featuring upscale bites like foie gras nigiri and scallop sashimi crowned with caviar, as outlined by CultureMap San Antonio. At many locations, Chubby Cattle leans hard into spectacle, outfitting dining rooms with robot servers, conveyor belts and projected shows that turn dinner into a kind of wagyu variety act. Eater LA has even dubbed the chain the “Costco of Wagyu” for its bulk approach to sourcing A5 beef.
